Carrot Cake

Cake Ingredients

2 cups of plain flour

2 teaspoons of baking powder

2 teaspoons of baking soda

3 - 4  eggs

1/3 of a cup of olive oil

pinch of salt

1 - 2 cups of sugar

1/2 teaspoon of Vanilla extract

2 teaspoons of cinnamon

1/2 cup of chopped walnuts

4 cups of grated carrots 

Icing Ingredients

8oz of cream cheese

2 oz of soft unsalted butter

3/4 cup of powder sugar


* Preheat oven at 350F ( 175C )

* Whisk the eggs and sugar together mix in the oil slowly

* Add the sifted flour with the baking powder, baking soda, cinnamon and a pinch of salt stir in the carrots and walnuts bake for 45 minutes or until a toothpick inserted comes out clean

For the Icing:

* Combine the cream cheese, butter and sugar together and whisk until smooth

* Spread it over the cake and leave to set
